The Tajiks prepare their flat bread, using a somewhat different method from their Pushtu neighbors. In the grim Hindu Kush Mountains, a lone Moslem woman of the Tajik tribe kneads her dough into a flattened, rounded form, slapping it to the vertical walls of her clay oven. The crisp, flat, unleavened bread is like that of Biblical times.
